Eating healthy has always been a big part of Jessica’s life, because it has kept her healthy and has given her the stamina to accomplish her goals, like completing her Masters degree in Special Education. Her healthy lifestyle gave her the extra energy her cerebral palsy required for her to complete her degrees while working to support herself and then on to other employment. She wrote this book as a simple, yet informative, textbook for the healthy cooking classes she teaches to adults with special needs. Part One of this book is about keeping the body healthy with simple healthy recipes, including some of her students’ favorites. Part Two is comprised of the nutritional information and health benefits of a wide variety of foods.
