Ingredients:

  • 2 cups cooked short-grain white rice
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 nori seaweed sheets
  • 1 small cucumber, julienned
  • 1 ripe avocado, sliced thinly
  • 1 carrot, cut into matchsticks

Instructions:

  1. In a small bowl combine rice vinegar + sugar + salt until dissolved.
  2. Mix this seasoning mixture into freshly cooked short-grain white rice.
  3. Place one sheet on bamboo mat covered with plastic wrap.
    4.Add thin layer seasoned rice evenly over nori seaweed sheet leaving about an inch from top uncovered.
    5.Along bottom edge arrange strips cucumber+avocado+carrot horizontally across center surface ensuring even distribution vegetables along lengthwise & width wise directions then tightly roll up bamboo mat pressing firmly making sure no air spaces left inside as continue rolling till reach opposite side sealing end securely during process … yet gently without squeezing too tight so contents doesn’t spill outwards much when cutting later on; repeat remaining sheets rest veggie filling lastly serve cut pieces soy sauce
